In a large bowl add sour cream and taco seasoning and blend well
Fine shred 1 1/2 cups of Colby jack or cheddar cheese and set aside
Drain corn and rotel and once drained combine in to the sour cream mixture.
Once well combined add cheese slowly and stir in combining ingredients until you have added a cup and a half of cheese
Serve with your favorite tortilla chips

Best if you let set up in the refrigerator for a few hours or even over night, but you can serve immediately if needed making it the perfect boat dip for all Crazy Busy Mamas!
