Broccoli Cheddar Soup

Panera Copycat soup perfect for a cool day!

Ingredients
  

  • 1 Stick butter
  • 1 tbsp garlic powder
  • ¾ tsp salt
  • 1 tsp pepper
  • ½ tsp smoked paprika regular works too!
  • ½ cup all-purpose flour
  • 14.5 oz low sodium chicken broth
  • 2 head fresh broccoli a large frozen bag works too!
  • ½ onion
  • 1-2 carrots
  • ¼ cup heavy whipping cream
  • 8 oz shredded cheddar cheese

Instructions
 

  • Chop all of the veggies and add them to the inner pot of your pressure cooker and sauté.
  • Add in the broth, flour, garlic, paprika, salt and pepper. Stir to combine.
  • Seal and close your pressure cooker and turn the vent to "sealing." Set the pressure cooker to pressure cook on high using the soup option (May vary with brand of pressure cooker)
  • Allow pressure to come up and cycle to completely finish. Do a quick release to let out the pressure.
  • Add cream and shredded cheese and stir to melt the cheese. Mix until combined and the soup thickens.
