Cheeseburger Soup

Ingredients
  

  • 4 small russet potatoes
  • 1 small white onion
  • 1 cup carrots
  • ½ cup celery
  • 1 tsp dried basil
  • 1 tsp dried parsley
  • 3 cups chicken broth
  • 1 lb ground beef
  • 3 tbsp butter
  • 2 tbsp Flour
  • 2 cups milk
  • ½ tsp salt
  • ½ tsp black pepper
  • 16 oz. Velveeta processed cheese

Instructions
 

  • Chop up 4 small russet potatoes, 1 small white onion, 1 cup carrots, and ½ cup celery
  • Put all chopped vegetables, 1 tsp dried basil 1 tsp dried parsley, & 3 cups chicken broth in crock pot
  • Cook on low heat 6-8 hours OR high heat 4-5 hours
  • About 45 minutes before serving, brown 1 lb ground beef & add to crock pot
  • Add 3 tbsp melted butter & 2 tbsp flour in a skillet and cook until golden brown & bubbly (about 1 minute)
  • Whisk in 2 cups milk, ½ tsp salt, & ½ tsp black pepper then add to crockpot
  • Add 16 oz. Velveeta processed cheese (cubed) to crockpot and stir
  • Cook 30 more minutes then serve
