Instructions
Egg Roll Filling
brown up a pound of ground sausage in skillet over med-high heat
once sausage is cooked add coleslaw mix – I love to use two and if you do two you will want to incorporate about 8 ounces at a time and cook as you go so the coleslaw cooks down
once combined and low sodium soy sauce, garlic and ginger
mix all ingredients together and let cook up for about 3-5 mins
if you like heat a bit of red pepper flakes- but this is optional
then add sliced green onion to the top and let combine for a few mins
Egg Roll Wrapped
Take an Egg Roll wrapper and lay it flat on a cutting board or hard surface. I just like to do them on a cutting board for easy clean up.
Take a large scoop of mixture and start rollin up diagonally
use a dap of water on the ends to make sure it stays together
once you have 6-8 Egg Rolls wrapped
spritz each Egg Roll with Avocado oil
Place in air fryer at 400 for 8 minutes
enjoy with favorite dipping sauce

For the Egg Roll filling:you could easily substitute and do ground turkey or chicken. Or even leave the meat out all together.
