Ingredients
  

  • 2 tbsp butter
  • 1 tbsp onion minced or powder- can even use 1/2 medium chopped
  • 1 tbsp garlic minced (or 4 cloves)
  • 2 tbsp tomato paste
  • 28 oz tomatoes diced - love fire roasted
  • 2-3 cups rotisserie chicken
  • 2 cups spinach or kale you can tear this up or it will wilt during cooking
  • 32 oz chicken broth low or no sodium
  • 1 cup water optional depending on desired thickness
  • 1 cup heavy whipping cream
  • 16 oz gnocchi
  • salt & pepper to taste
  • 1 tbsp basil torn - optional
  • parmesan cheese optional

Instructions
 

  • in a pot over medium high heat add butter, garlic and onion- fresh, powder or minced
  • add tomatoes, chopped rotisserie chicken, basil, tomato paste and combine well
  • then add chicken broth and fresh spinach. You don't have to tear this or remove steams unless you want to, because it will wilt down while cooking.
  • once the your liquid comes to a simmer add gnocchi
  • cook simmering for about 4 -5 mins
  • then add heavy whipping cream and stir well
  • cook until comes to a simmer for a only a few minutes and gnocchi should be ready
  • we love to top with Parmesan cheese
