Ingredients
  

  • 3 pancake mix
  • 2 water or milk

Toppings

  • 1/2 cup blueberries fresh or frozen
  • 1/3 cup mini chocolate chips

Instructions
 

  • Preheat Oven 350
  • In a large bowl mix pancake batter and liquid (milk or water)
  • Mix until combined
  • Then spray with butter on a mini muffin pan
  • Add a scoop full of batter to each mini muffin until 2/3 full leaving a space for baking
  • If you are using multiple toppings just add to the top of each muffin and stir slightly in each
  • If you are using just one topping you can mix in batter prior to pouring in muffin tin
  • Bake for 350 for 18-20 mins until toothpick comes out clean

Have fun with this recipe and add a variety of toppings of your choice. You can use fresh or frozen fruit or different baking chips, Sprinkles would even be fun too!
