Oatmeal Cookies

Chocolate Chip or Raisin! You get to choose, this recipe will make either or both in the same batch!

Equipment

Ingredients
  

  • 1 cup Shortening I use butter shortening
  • cups Flour
  • 1 cup Sugar
  • 1 cup Light Brown Sugar firmly packed
  • 1 tsp. Baking Soda
  • 4 cups old fashion oats
  • 2 eggs
  • 2 Tbsp. Milk
  • 1 cup 8 oz. Semi-Sweet Chocolate Chips or Raisins
  • tsp. Pure Vanilla Extract
  • 1/2 tsp salt optional

Instructions
 

  • Heat oven to 375°F.
  • In a large bowl, blend shortening with sugar, adding sugars gradually.
  • Add eggs, milk and vanilla; beat well.
  • Gradually Add flour, salt and baking soda; beat well.
  • Stir in oats (I used my hands to make it easier)
  • Stir in Chocolate Chips or raisins. (if you are making both and want to keep them separate. only add a layer to the top before scooping the cookies!)
  • Drop by rounded tablespoonfuls 2 inches apart onto ungreased cookie sheet (lined with parchment paper!)
  • Bake for 13-15 minutes or until golden brown.
  • Remove from oven and let stand for 5 minutes.
  • Place cookies on a wire rack to finish cooling.

Notes

If you are making all chocolate chip or all raisins, you can stir them in now. If you want to do half and half like I did. Only add them to the top right before scooping the cookies!
