One Pot Cajun Pasta

Ingredients
  

  • 1 lb boneless skinless chicken breasts chopped
  • 1-2 lbs shrimp
  • 1 ½ tbsp cajun seasoning of choice
  • 2-3 peppers sliced
  • 1 tbsp onion powder
  • 1 ½ tbsp minced garlic
  • 14.5 oz low sodium chicken broth
  • 1 can diced tomatoes Rotel
  • ¾ cup heavy cream
  • 12 oz. penne pasta
  • 2 tsp cornstarch
  • ¾ cup shredded parmesan
  • 3 tbsp parsley garnish

Instructions
 

  • Chop Peppers and Parsley and set aside
  • Shred cheese and set aside.
  • Chop Chicken and rinse shrimp
  • Add olive oil, chicken and favorite cajun seasoning . Stir to mix & cook chicken
  • Add Shrimp, onion powder, cajun seasoning of choice, and butter to skillet & cook
  • Remove Meat from pan and place on aluminum foil & cover with foil
  • Add oil and peppers to the skillet then add rotel, garlic, and a shake of cajun seasoning & Sauté
  • Add chicken broth, whipping cream and pasta of choice
  • Stir to mix together.
  • Cover and let the pasta cook
  • While the pasta is cooking, Mix cornstarch and 1 tbsp water in a separate bowl
  • Add cornstarch mix once pasta is cooked
  • Add the chicken and shrimp into the pasta mixture & stir.
  • Top with Shredded Parmesan Cheese
  • garnish with parsley
