Ingredients
  

  • 12 dill pickles
  • 1 oz rotisserie chicken lunch meat one slice
  • 1/2 tbsp cream cheese I love to use flavored whipped chive

Instructions
 

  • On a flat surface like a cutting board take one piece of lunch meat and lay it out flat
  • then take a spoonful of softened cream cheese and spread it over the piece of lunch meat
  • Take as many pickles that you are going to wrap and blot them with a paper towel getting all the juices off. Trying to get them as dry as possible.
  • then take your dry dill pickle and place on end side with cream cheese and start to roll towards you until you cover the entire pickle
  • enjoy immediately or store in glass or plastic container in fridge for up to 3 days
  • make up as many as you want and serve them on a board for a low carb snack

Notes

These pickle roll ups can be rolled with any lunch meat. You could do some chicken (like shown in recipe), turkey or ham. You can also use regular cream cheese or use different flavors of cream cheese for a variety. Think of all the variations of meats and cream cheeses you can put together. Perfect low carb item to your charcuterie board or game day spread.
