Preheat oven 375
In a skillet over medium heat brown ground beef and add taco seasoning until cooked.
Cut up corn tortillas and place into a large bowl
Then add cooked taco meat and stir together once combined add enchilada sauce and mix well
Grab a large sheet pan lined with parchment paper and pour all mixed ingredients down on sheet and smooth out to as much of a single layer as you can, covering the entire sheet pan.
Shred cheeses you can use whatever cheese you like best. I love to do a combination of montery jack and cheddar
Once cheese is shredded cover entire sheet pan ingredients with cheese
Once covered with cheese add sliced olives and jalapeños if if wish, I usually cover only half of the sheet pan with jalapeños to make it super family friendly for all.
Bake 375 or 25 mins
Once done it will be bubbly and crispy, let cool for a few minutes then cut and serve with a large turner spatula with favorite toppings
