Slow Cooker Garlic Parmesan Chicken & Potatoes

Ingredients
  

  • 2 lbs chicken
  • 2 garlic cloves or minced
  • 1 tbsp garlic powder
  • 1 1/2 lbs baby potatoes sliced
  • 3/4 cup chicken broth low sodium
  • 8 oz Italian Dressing Seasoning - Dry Mix I love to use good seasons brand
  • 1 tbsp olive oil
  • 1/2 cup parmesan cheese grated
  • 3/4 cup parmesan cheese shredded
  • 1/2 tbsp parsley fresh or dried
  • pepper to taste

Instructions
 

  • On a cutting board take chicken breasts and cut into cubes. You can also cut the potatoes as well if you would like this helps to give a more even cook on chicken and potatoes.
  • In slow cooker add all ingredients adding potatoes first, then including cubed chicken on top EXCEPT the shredded Parmesan cheese to the slow cooker. Stir to mix well
  • Place lid on slow cooker and cook on low for 4-6.
  • Top with shredded Parmesan cheese & parsley.
    If you turn off the slow cooker and let it sit with the lid on, the cheese will melt in a few minutes.
  • After cheese has melted, it is ready to serve.

Prior to cooking spray slow cooker with non stick spray or use a slow cooker liner this will help with easy clean up!
