Ingredients
  

  • 1 lb shredded chicken
  • 16 oz Penne Pasta
  • 10 oz rotel
  • 15 oz black beans
  • 11 oz mexi corn
  • 1 1/2 cups chicken broth
  • 1 1/2 cups cheddar cheese montery jack

Garnish

  • cilantro

Instructions
 

  • Preheat oven to 350
  • Spray casserole dish with olive oil
  • Cook Pasta and strain
  • In casserole dish add cooked pasta, cooked chicken, drained corn, rinsed and drained black beans, drained rotel and chicken broth and about 1 cup of cheese and mix together well.
  • Bake for 30 minutes covered
  • Pull out and cover dish with the remaining cheese and cook until cheese is melted (about 5- 7 mins)
  • Allow to cool on counter for few minutes garnish with cilantro and serve

Notes

I am using left over chicken tacos for this recipe, however you can also slow cook chicken and shred by making these CHICKEN TACOS HERE - double up the recipe and make chicken tacos one night and use left overs for the following night by making this delicious Southwest Chicken Pasta Bake
