Who else loves an easy throw together meal on those crazy busy nights? I know I do and it is even better if it tastes incredible like this easy Baked Cheesy Tortellini

I don't know about you, but I could do pasta every night of the week! My boys love anything pasta it and my girls could have it a few nights a week. After suddenly losing Q, I want all the pasta I can get my hands on because it is a true comfort food for me. Life seems to be super hard right now to accomplish anything, so an easy meal like this to help me reclaim the table with my sweet kids is a must! It's important that we get back to having meals like we were with their father, it's just taking everything I have to make that happen right now emotionally so EASY meals are what I need.

For those of you unaware of the sudden death of my best friend you can read more about Q's STORY HERE. We are doing the best we know how to move forward honoring him each and every day. Baked Cheesy Tortellini

Ok mama, let me show you how I put together this easy and incredible meal!

This Baked Cheesy Tortellini is hands down a crazy busy mama win!

Ingredients: Baked Tortellini

  • 18 oz cheese tortellini
  • 1 lb ground beef
  • 1 tbsp garlic powder
  • 1 1/2 tbsp Italian Seasoning
  • 1 lb provolone cheese
  • 45 oz marinara sauce

Instructions: Baked Tortellini

  • Preheat Oven to 350
  • Spray with non stick a 9X13 pan
  • In a medium skillet brown ground beef until no longer pink add in garlic and Italian seasoning

Ground Beef
  • Then add marinara sauce to meat
  • Once sauce and meat are combined add 1/2 of the meat mixture to the bottom of the 9X13 dish
Meat Sauce
  • Then add uncooked tortellini – I prefer the refrigerator kind so if you are using frozen allow them to thaw out and pat off excess moisture before adding to dish
Tortellini
  • Then cover tortellini with the rest of the meat mixture
  • Add provolone cheese to the top of the meat sauce covering with cheese
  • Cover with foil and bake at 350 for 30 minutes until bubbly

Crazy Busy Mama Tip: prior to covering dish with foil make sure to spray with non stick so the foil doesn't stick to your cheese pulling it all off the dish. Another tip is to make sure to spray the foil and 9X13 dish over the sink or dishwasher so the spray residue doesn't end up on your kitchen floor 

You could make this dish ahead preparing or a busy week and place in fridge and bring out to enjoy for yet an easier meal. Just need to add 15 minutes to the dish if it is cold.
