Taffy Apple Cookie is the best of fall desserts 🍏so simple to make & will be enjoyed by kids of all ages. I have held on to this recipe for years and used to be one of my late husbands go to for fall desserts when we were first married. Easy dessert to throw together that looks like you spent lots of effort and time on.
I just use refrigerated sugar cookie dough, but you certainly could make your own too. As a crazy busy mama, I am all about shortcuts and sharing how we can create shortcuts creating meals for our family instead of going through those drive thrus and utilize our limited and precious time together around the dinner table instead of making gourmet meals. Let's face it, no one prepares us mamas for all the meals we will make and hungry mouths we will feed. So I am a firm believer in keeping it simple! One day you might have time for gourmet but in the thick of the crazy busy mama life, that time is not now! Ok mama, here is how I put this super simple mouthwatering Taffy Apple Cookie together!
Ingredients: Taffy Apple Cookie
16.5 oz sugar cookie
8 oz cream cheese – make sure it is softened
1/2 cup brown sugar – packed
1/4 cup creamy peanut butter
1/2 tsp vanilla extract- I use Sava
1/4 cup caramel
1/2 cup peanuts
2 apple granny smith – sliced
Instructions: Taffy Apple Cookie
Preheat Oven 350
Roll out sugar cookie dough onto a round pan like the stone pan used in video. You may need to use a small rolling pin to cover baking stone.
Once rolled out you will bake at 350 for 13-17 minutes until edges are light golden brown
While baking you will mix together cream cheese, brown sugar, peanut butter, vanilla in a medium size bowl until well combined.
Slice apples long length in same size and put sliced apples in a lemon lime soda in a bowl to soak. Make sure all apples are covered in lemon lime soda. This will help them to not turn brown when you put them on the cookie later.
Then take the peanuts and chop them up and set aside
Once cookie is baked you will allow cookie to cool on counter
Once completely cooled you will add cream cheese mixture and spread evenly over cookie
Drain apples from lemon lime soda and pat dry
Assemble the cut apples on top of the cream cheese mixture on the top of the cookie
Drizzle caramel on top of the apples. I find this easier when I heat up the caramal for about 10-15 seconds in the microwave.
Take the chopped peanuts and sprinkle them on top of the cookie.
Slice and Serve

Make sure to soak those apples in a bowl with lemon lime soda or juice and make sure the all the apples are fully covered. This will ensure your apples won't turn brown when you put them on your cookie.
