This one is so EASY to throw together for those last minute meals and one your entire family will love! The video tutorial below I am using a pressure cooker but if you don't have a pressure cooker and want to use a slow cooker I have also included separate instructions below.
The best part about these bowls is you can choose your toppings to put on them when you serve. I know toppings are a favorite for my kids. Doesn't it look delicious?

I promise it will make your life easier when it comes to dinner time! Not to mention it is a super cute slow cooker one that actually looks good sitting on the counter top! Cute slow cooker with a delicious easy meal for dinner, um I call that an absolute Cray Busy Mama WIN!
Ok here is how I put this super quick Fiesta Chicken Bowl dinner together.
Ingredients: Fiesta Chicken Bowl
2 lbs Chicken Breasts
1/2 tbsp avocado oil
2 tbsp fiesta ranch seasoning
black beans
rotel
corn frozen
2 cups rice
1 cup chicken broth low sodium
1 cup water or two cups of broth
Toppings
tomatoes
cilantro
avocado
cheese
sour cream
Instructions: Fiesta Chicken Bowl
On a cutting board cube up 4 chicken breasts and place into pressure cooker over avocado oil to prevent sticking.
Then add a packet of Fiesta Ranch seasoning over the top of the chicken
Add a can of black beans to the top of the chicken. Make sure to drain and rinse beans prior to putting in pressure cooker
Dump over the top one can of Rotel (no need to drain)
Add frozen corn
Then mix all ingredients together well in pressure cooker.
add uncooked Rice. I do rinse my rice before cooking. (minute rice will cook a lot quicker, so you may need to adjust cooking time if using minute rice)
Pour in Chicken Broth and water. I always use low sodium chicken broth and then do half and half water/broth. But feel free to use all broth if you choose. The full broth does give it more flavor, but honestly we don't miss it at all.
Set pressure cooker to chicken setting for 15 minutes and once done do a quick release.
On that quick release make sure to be careful to stand back from the steam and use a wooden spoon that is long enough where the steam won't burn you.
Once done mix ingredients together
Serve with favorite toppings like shredded cheese, avocado, sour cream and tomatoes.
Now it is time to enjoy!!
Slow Cooker Instructions:
4-6 hour chicken with 1/4 cup chicken broth & everything but rice. Once chicken is done make rice. I make the rice separate with 2 cups of liquid to equal rice over the stove top. Add ingredients together in slow cooker and serve with favorite toppings.
Side Idea:
I definitely serve this Fiesta Chicken Bowl as a complete meal and you should too! Crazy Busy Mama Tip:
Looking to substitute to keep as low carb as possible? You can use cauliflower rice and add to chicken after cooked.
You can also put this in a slow cooker and dump and go and come home to a nice hot fully cooked meal! I did add *these instructions above after pressure cooker instructions.
I prefer a digital slow cooker for this meal as you can set the desired time you need to prevent under or over cooking. I love this DIGITAL SLOW COOKER HERE, and mama it also comes in PINK so that makes me happy! ha- It truly is the little things!
