Calling all pasta lovers this is an amazing super easy throw together recipe for your family! You can omit or add ingredients based on the taste preferences by your family. You could also very easily substitute protein from chicken to ground beef or shredded beef for this one too. I did chicken for this Southwest Pasta Bake and it is absolutely incredible!

Southwest Chicken Pasta Bake

I am using left over chicken tacos for this recipe, however you can also slow cook chicken and shred by making these CHICKEN TACOS HERE – double up the recipe and make chicken tacos one night and use left overs for the following night by making this delicious Southwest Chicken Pasta Bake 

You can serve this dish up on plates or bowls and one that will satisfy the biggest of hungers!

Southwest Chicken Pasta Bake

Ok mama, here is how I made this amazingly delicious Southwest Chicken Pasta Bake.

Ingredients: Southwest Chicken Pasta Bake

1 lb shredded chicken

16 oz Penne Pasta

10 oz rotel

15 oz black beans

11 oz mexi corn

1 1/2 cups chicken broth

1 1/2 cups cheddar cheese montery jack

Garnish

cilantro

Instructions: Southwest Chicken Pasta Bake

Preheat oven to 350

Spray casserole dish with olive oil

Cook Pasta and strain

In casserole dish add cooked pasta and cooked chicken

Drained corn, rinsed and drained black beans, drained rotel and chicken broth and about 1 cup of cheese

And mix together well.

Bake covered for 30 minutes covered

Pull out and cover dish with the remaining cheese and cook until cheese is melted (about 5- 7 mins)

Allow to cool on counter for few minutes garnish with cilantro and serve

Grab a big wooden spoon and serve in bowls to your family! This is a great one meal dish

If you are shredding your own cheese, I would highly recommend this CHEESE SHREDDER it is so easy to use, shreds cheese at ease and you can throw in the dishwasher its my absolute fav!

    This recipe tasted great and was so easy to make. After it sat in the refrigerator, it seemed like it needed a sauce because it was kinda dry. So I made homemade alfredo sauce and topped it with that. It was delicious!
