I want to let y'all in on one of my favorite Crazy Busy Mama secrets. ROTISSERIE CHICKEN.

I buy a Rotisserie Chicken every time I get groceries. You can use it for so many recipes, and it makes meals even quicker and easier! And as Crazy Busy Mamas, that is something we all need! A quick and easy way to feed our families! That is a huge factor when it comes to being able to #reclaimthetable 🩷

When preparing the meal is fast, it gives you more time to enjoy being together and connecting around the table! Is intentional time around the table something you would love more of this year? Then you NEED to check out my Reclaim The Table Cookbook! It is full of quick and easy recipes to help you reclaim the dinner table for you and your family! This is my true passion!

This was my OG Cookbook! It was a passion project that Q and I did together! He had it printed for me after we finished it. He was so proud of us. As of right now, It is only available as a digital download, but I think Q would love for it to come full circle and be offered as a printed copy. What do you think? Should we offer it as a physical cookbook? Let me know in the comments below!

I truly believe that you will never regret those meals spent together, connected and supporting each other! I know those are some of my most treasured memories of life before we suddenly lost Q. 💔

For those of you unaware of the sudden death of my best friend you can read more about Q's STORY HERE. We are doing the best we know how to move forward honoring him each and every day. He and I decided that reclaiming our table was important to us, and I am so glad we did. I mean just look at us, my smile says it all. My whole world around a table!

Okay so how are we going to use that Rotisserie Chicken today? In a Chicken Pot Pie Casserole!

I don't know about your family, but mine love Chicken Pot Pie! And this casserole is definitely one of my favorites! It is a great way to mix things up and it is PERFECT for any crazy busy mama with picky eaters!

Here is how I make it!

Ingredients:

1 Stick of Butter

1 Rotisserie Chicken

1 Small Bag of frozen Mixed Vegetables

2 cans Cream of Chicken Soup

2 cups Chicken Broth (or water)

2 cups Milk

2 cups Bisquick

Crazy Busy Mama Tip: There is a cleaner and easier way to debone rotisserie chicken! Just Seal the Chicken in a ziplock baggy and use your hands to work the chicken off of the bone! This is an absolute game changer! You can see my how-to guide here:

Directions:

Layer 1 stick of melted butter and shredded rotisserie chicken to the bottom of a 9×13 casserole dish.

Next add a layer of frozen veggies

Mix together 2 cans of chicken soup and 2 cups chicken broth (or water) and pour into pan.

Mix 2 cups milk with 2 cups Bisquick and pour overtop ingredients in pan, but DO NOT mix in!

Bake at 350 for 45 minutes

Let it set for 20 minutes

ENJOY!

There you have it! Time to gather your family because dinner is SERVED!
