As a Crazy Busy Mama, it used to drive me CRAZY when my toddlers would only eat one thing. This Chicken Cheesy Croissant dish is a family favorite for even the pickiest eaters!
We have all been there, and I promise it is a phase that passes. You can't exactly send a toddler to bed hungry because they claim not to like what you have cooked. It was always funny to me how the select few things my picky eaters would actually eat always seemed to change from week to week… SIGH.. Kids.. am I right?😂
If dinner time feels like a battle every night, just take a breath and remember: this too shall pass! You've got this friend!
Honestly it goes by so quick that I often feel like I barely remember the days of my children only wanting Mac and cheese for dinner.
But I do remember how hard it can be to cook a meal and then being unable to get your toddler to try even just one bite. Well you don't have to worry about that with this dinner! First of all, this dish is a favorite for every age. From grandparents to toddlers, I have yet to find someone who doesn't love this one!
Secondly, this recipe is a cinch to throw together so you won't be standing over a hot stove for hours! In fact it is such a fun meal for your kiddos to help you with! Rolling those crescent rolls will definitely be a hit for the younger crowd! So wash their hand and let them help!
I always found that my picky eaters ate better when they got to help make the dinner!

How to make Chicken Cheesy Croissants:
Shred cooked chicken (boiled, rotisserie, or baked). If you dread shredding chicken you need this utensil! I use it for so much in the kitchen!!
Roll shredded chicken in each croissant triangle
Place in greased 9×13 baking dish
Mix 1 can cream of chicken, 1 cup water, 1 cup shredded colby jack. I love freshly shredded cheese, don't you? This cheese grater wheel is THE BEST!!
Pour mixture on top of rolled chicken croissants
Bake at 350 for 30-35 minutes
There you have it! Dinner is served!

Crazy Busy Mama Tip: Not quite ready to eat, but dinner is ready? No worries! Just put some aluminum foil over it and put it on warm in your oven! Make sure you spray aluminum foil for cheesy dishes so the cheese stays in place! You can see what I mean here!
