Who else loves an easy crockpot meal?? You will love this Slow Cooker Tuscan Chicken Recipe. Not only is it absolutely delicious, but it is so simple! Just set it and forget it; then when you get home after a busy day, dinner will be waiting for you and your family to enjoy!

As many Crazy Busy Mamas are, our afternoons are often packed with practices, rehearsals, and other activities that keep us on the go! When I first made this dish quite a few years ago, it was baseball season. I knew we would be gone all day for a double header, and would come home hungry and tired!

Of course many times, that is when families resort to fast food for dinner. But when you have multiple kids in different activities that keep you out of the house until dinner time almost every day of the week, that gets expensive! And in addition to the expense, it is often not as healthy and you will miss out on one of the most important times as mamas, DINNER TIME!

So I decided to throw this in the crockpot before we left for the first game that morning! When we walked back through the door that evening, utterly exhausted, dinner was ready! And not just ready, it was easy, inexpensive and best of all; it was DELICIOUS!

Whether you are looking for a recipe for tonight, or need yummy go-to recipes for those busy days in your life; this is one you will definitely want to save!! It is a family favorite in the Conway House!!

So grab your crockpot, gather your ingredients let's get cooking! You will thank yourself later when you are coming home to a scrumptious home cooked meal rather than going through a drive thru again!

Ingredients for Slow Cooker Tuscan Chicken

How to make Slow Cooker Tuscan Chicken:

6 – 8 chicken tenders

3 tablespoon butter

6 cloves garlic, minced

1 cup heavy cream

1/3 cup (80ml) chicken broth

3/4 cup grated parmesan cheese

1 tablespoon Italian seasoning

1 teaspoon crushed red chili pepper flakes, optional

Sea salt and fresh cracked black pepper as desired (I love this salt & pepper grinder set!)

Small container of whole cherry tomatoes

2 cup Spinach (chopped)

1 box of preferred pasta

Notes for Slow Cooker Tuscan Chicken:

I topped with shaved parmesan cheese! It was the perfect final touch to this dish!

How to Make Slow Cooker Tuscan Chicken:

In your slow cooker, combine chicken tenders or breasts, butter, garlic, cream, chicken broth, grated parmesan cheese, Italian seasoning, tomatoes, spinach, salt and pepper (optional: red chili pepper flakes)

Cook on low for 6 – 8 hours, then top with shaved parmesan cheese

While the shave parmesan cheese is melting, cook your pasta.

Add cooked pasta to the slow cooker and stir! (check out the Crazy Busy Mama Tip below before you drain your pasta!)

Crazy Busy Mama Tip:

To bring out even more delicious flavor, you can try this! Reserve 1/4 a cup of pasta water and add to slow cooker with noodles once they are cooked. Adding this starchy pasta water helps to combine all the flavors together.

  • top with shaved parmesan cheese
  • cook pasta
  • add cooked pasta to the slow cooker and stir
