Who else loves an easy grab-and-go breakfast on those busy days? Then you will love this Banana Nut Muffin Recipe. Not only is it totally scrumptious, but it is also super easy and you can finally use those over ripe bananas that turned brown too quickly! Or maybe your toddler loved bananas last week so you got a ton from Costco and then they woke up this morning and decided they didn't like bananas…. at all! Life with toddlers… right?! Well stop letting those bananas go bad on the counter top and let's use them up by making some delicious and super easy Banana Nut Muffins!
But seriously, why is it that when I want to make banana bread I have not quite ripe bananas and when I don't have time to make banana bread I have over ripe bananas coming out my ears! Ha…such is life! So if you are the latter, and have those bananas but not a whole lot of time this recipe is for you! Either way, this recipe is one you definitely want to save!

Muffins are a Crazy Busy Mama's best friend. A grab and go breakfast, an afternoon snack, a bedtime snack; there is never a wrong time for muffins! My kiddos love them, they always have. It's kind of like they are getting to eat cupcakes for breakfast. Muffins are also so fun when you want to have a baking day with your kids! Yes, it can get a little messy but there is something so fun for kids to fill up each muffin tin!
If you are making muffins with younger kids, here is a trick for you. If you don't have a batter dispenser, Take a ziplock baggy and fill it with the muffin batter. Then cut the very edge of the bottom corner off and let them squeeze the batter into the muffin tin. And when I say the very edge, I mean a tiny bit! You can always cut more if needed, so start very small. Yes it will still be a little messy, but most of the mess will be on the muffin tin instead of across the counter from them trying to use a spoon to scoop the batter into each tin. Trust me, your counters will thank you!
I used to let my kids help make the muffins we would take to their teachers for teacher appreciation week, or anytime we wanted to give them a treat! Because we really should be spoiling our children's teachers. They deserve so much more than just a week of appreciation!
Since I have 4 kids, that means a lot of teachers to show our gratitude for all that they do for my children. Making a loaf of banana bread for each teacher, and then the ‘specials' teachers who do art and music etc. … honestly that felt like a lot when I was already spread thin trying to be a mama to 4! So we made muffins instead! Just a few muffin tins of banana muffins and we were able to give a treat to every teacher and each faculty member; and even have some left over for us to enjoy!

How to make Banana Muffins: ingredients you need!
1 box of yellow cake mix
1 box of banana cream pudding mix
4 eggs
1/2 cup water
1/2 cup oil
4 mashed bananas
1 cup nuts & or chocolate chips (optional)

How to make Banana Muffins: a step by step guide!
Preheat oven to 400°F. Line a muffin pan with liners, set aside.
Mash Bananas and set aside
Mix all dry ingredients together
Mix all above wet ingredients together
Then add the mix of wet ingredients to the mix of dry ingredients and mix together
Add bananas to the mixture
Add walnuts/chocolate chips if you desire.
Scoop the batter into the prepared muffin pan about 2/3 of the way.
Bake 350 for 23-27 mins as jumbo muffins
Test with a toothpick to make sure it comes out clean and once it does you have a perfectly baked banana bread muffins.

Don't have time to mess with those over ripen bananas right now? Thats ok… just throw them in the freezer as is or peel and place in baggie and smash them so they are ready when you are!
But don't you dare throw them away! Those bananas have so much more life left and when are not good for snacking anymore they are absolutely perfect for banana bread!

- 1 Kitchenactics NonStick Bakeware Set muffin tin
Ingredients
- 15.25 oz Yellow Cake Mix 1 Yellow Cake Mix
- 3.4 oz Banana Cream Pudding Mix
- 4 eggs
- 1/2 cup water
- 1/2 cup oil vegetable or canola
- 4 bananas mashed-over ripe work best
- 1 cup walnuts optional
- 1 cup semi sweet chocolate chips optional- I like mini semi sweet
Instructions
- Preheat oven to 350 F
- Line muffin pan and set aside
- Mash 4 overripe bananas & set aside
- Mix together dry ingredients in a bowl
- Mix together wet ingredients in a bowl
- Combine wet & dry ingredients together and mix well
- add nuts/chocolate chips – optional
- Bake 350 in preheated oven; 23-27 mins – until toothpick comes out clean
