Only 5 ingredients will make this incredibly delicious Pina Colada dump cake! It seriously like a vacation on your lips. Why not pretend to be on vacation when it is sub zero degrees out with what feels to be a feet of snow! I mean a girl can dream right?

Needless to say, I was craving some sunshine and this was the next best thing for this midwestern mama in the middle of cold February. Dump cakes are so easy to throw together and we had some ice cream in the freezer so thought this Pina Colada Dump cake would hit the spot. I ran to the pantry and had all of the ingredients, but a bit disappointed to be missing one of the tropical garnishes….maraschino cherries! Not having maraschino cherries didn't stop me though, and I am sure glad it didn't because wether or not served with a perfectly plump maraschino cherry or not this Pina Colada Dump cake was like sunshine on my lips!

I will admit, I did have to get a wee bit creative because half of my kids don't care for coconut (crazy right?)so I only did half of the cake with coconut and a generous amount of it too!

Here is this tropical goodness below and oh my doesn't it look delicious? I served mine with ice cream but homemade whipped topping would be delicious too!
