With all the flavors of a loaded baked potato, this soup is comforting and oh so delicious.  Gnocchi, bacon, cheese, and scallions are combined in a light, creamy broth to give your taste buds all the flavor you are looking for!

Especially yummy and filling in the colder months!

Ok mama, here is how I made this incredible Loaded Gnocchi Soup.

Ingredients: Loaded Gnocchi Soup


6-8 bacon slices

1 tbsp bacon drippings

1 1/2 tbsp onion powder or diced small onion

1 tbsp garlic minced

1/2 cup fresh kale chopped

4 cups chicken broth low sodium

1 cup heavy whipping cream

16 oz gnocchi

black pepper to taste

Optional Garnish

sour cream

cheddar cheese shredded

green onions

crumbled bacon

Instructions: Loaded Gnocchi Soup

In a large bowl over medium heat combine 1 tbsp of bacon grease, onion (or powder), garlic and kale you will want to cook for about 3-4 minutes until kale wilts down.

Meanwhile, if you haven't cooked up the bacon needed you will want to do this. You can also use the same pan to cook up bacon that you will use for soup to save on dishes. While cooking bacon, make sure to reserve 1 tbsp of bacon drippings- you can fry up your bacon in a skillet or use the bacon wizard in the microwave. Makes perfectly crisp bacon mess free. Once bacon is cooked you will want to crumble and set aside.

Once the kale was wilted, you will want to add chicken broth.

Stir together over medium heat and once it comes to a simmer add heavy whipping cream and then 5-6 pieces of crumbled bacon to the soup

Then add gnocchi to the soup and cook for 5 minutes until the gnocchi rises to the top. (do not let it boil or the cream will start to separate giving it a gritty texture)

Add black pepper to desire and serve with favorite toppings. I love to reserve a few pieces of crumbled bacon to add to top, then cheese, sour cream and green onion.

Then Serve and ENJOY!

Now grab a roll or crackers and scoop it up and enjoy!
