Okay, back to the cold weather! ❄️ Here in Missouri, the experts are predicting lots of snow over the next couple of days. It has already started coming down at my house, so we are staying safe and warm with the fire roaring. Of course, Furbabies included!!
I am craving a yummy soup for lunch today, so I am making one that I know my whole family will enjoy! My quick and easy Broccoli Cheddar Soup!
This is a cinch to throw together and is just perfect for a cold day!
Do you sometimes find yourself avoiding soups because you always have crazy leftovers? Don't get me wrong, we LOVE leftovers in the Conway house! But if you find yourself thinking this meal is enough for Lori AND 4 teenagers (we all know how much teenage boys can eat!), it would be way too much food for my family; don't worry about that for another minute!
You won't be stuck eating leftover soup for a week. ✔️ Leftovers can easily be frozen and reheated for another day!
📣 Crazy Busy Mama tip! Check out my recipes that are food for freezing, make some and freeze for crazy busy days! Also, and this tip is a favorite of mine! If you double bag items and freeze flat, it makes the thawing process so much faster! I love doing this for raw ground meat as well!

Okay, here is how I threw together this soup for Snowmageddon 2025! ❄️
Ingredients:
1 tbsp oil
½ onion
1-2 carrots
1 tbsp garlic powder
1 tsp pepper
1 stick butter
½ cup all purpose flour
14.5 oz. low sodium chicken broth
2 heads fresh broccoli (large frozen bag works too)
¼ cup heavy whipping cream
8 oz. shredded cheddar cheese

This Panera copycat soup can easily be made with a slow cooker instead, just adjust cooking time to 4-6 hours on low. If you want a video or full blog tutorial on the slow cooker recipe, let me know in the comments below!
Gather your ingredients and prepare your work station!
Chop all of the veggies and add them to the inner pot of your pressure cooker. Add in the broth, butter, garlic, paprika, salt and pepper. Stir to combine.
Seal and close your pressure cooker and turn the vent to “sealing.” Set the pressure cooker to pressure cook on high (May vary with brand of pressure cooker)
Allow pressure to come up and cycle to completely finish. Do a quick release to let out the pressure.
Stir in the cream and shredded and stir to melt the cheese. Mix until combined & until the soup thickens.
I love this cheese grater! We never buy shredded cheese anymore. This grater is so easy to use and fresh just tastes better!
Enjoy in a bread bowl or with a dinner roll!
