Cheeseburger Casserole

Ingredients: Cheeseburger Casserole with Potatoes

  • 2 baked potatoes
  • 2 cups cheese
  • 1 lb ground beef
  • 1 Tbsp garlic powder
  • 1 1/2 tsp paprika
  • 1 red pepper
  • 10.5 oz cream of mushroom

If you are shredding your own cheese, I highly recommend this CHEESE GRATER HERE so convenient and dishwasher safe too!

Instructions: Cheeseburger Casserole with Potatoes

  • Preheat Oven to 350
  • Take 2 baked potatoes and slice scalloped style and layer on a greased 8X8 casserole dish

  • In a skillet over medium heat brown up a pound of ground beef and add all spices. Make sure to drain grease off of meat.
  • Then chop up red pepper and add to the skillet combining the meat and pepper then add cream of mushroom soup. Cook for about 2-3 minutes and combine well.
  • Shred 2 cups of cheddar cheese and use 1/2 cup of cheese on top of the potatoes

  • Once meat mixture is done add to the top layer of the casserole dish
  • Once you spread the meat mixture evenly add the other 1 1/2 cups of shredded cheese to the top.

  • Bake in oven at 350 for 30 minutes until bubbly.
  • Let cool on counter for about 5 minutes and it is ready to serve

You can quickly bake potatoes in the microwave or also use left over baked potatoes in this casserole. Don't have potatoes? You can substitute with tater tots too.  Also, an added Crazy Busy Mama Tip: Use a paper towel to soak up grease off of cooked ground beef and throw away in trash.
