It’s also perfect for a taco Tuesday or any night of the week!
Here is how I did it:
Ingredients:
8-10 Flour Tortillas ( I use low carb)
1 can of refried beans
1 can of green chilis
1 lb of precooked Rotisserie chicken – (or you can easily make your own)
1 packet of taco seasoning
12 -16 oz white queso dip
1 1/2 cups of shredded cheese (Mexican blend)
Tomatoes
Sliced black olives
jalapeño- I just used jarred (optional)
Directions:
Start with your cast iron or really any skillet will do as long as it is oven safe. I use this https://liketk.it/4pKjp enameled cast iron great for cooking on stove top and in oven and makes it easy for clean up.
Spray pan with non stick and layer on those tortillas. Depending on size of pan is how many tortillas you will use. Just cover bottom it is ok if they overlap. Spread over the top a can of refried beans, a can of green chilis (reserve about 1 tbsp)
Rotesserie chicken, pour on a packet of taco seasoning and white queso dip to the top.
Spread evenly. Layer tortilla on top to make the pie.
then add 1 1/2 cups of shredded cheese. I normally shred mine but used the pre shredded we already had. Dice up tomatoes and put on top add reserved green chilies, sliced black olives and jalapeño if you want a bit of a kick.
Throw in oven 350 for 35-45 mins until bubbly
