This Cold Rotel dip is super easy to throw together last minute, and is one of our favorites around the poolside during the summer months. It only takes 4 ingredients to make and if you need to you can serve as soon as you put it together!
I don't know a person who doesn't love a delicious dip with their chips, especially for entertaining. Chip dips just scream entertaining to me and the added bonus is that dips are so easy to throw together last minute too.
So grab yourself some tortilla chips, or any of your favorite chip and get dipping into this deliciousness.
Once you try this dip, it will quickly become one of your favorite summertime or really any-time dips!

Cold Rotel Dip Ingredients:
- 10 oz Rotel
- 16 oz sour cream
- 1 oz fiesta ranch
- 8 oz cheddar cheese shredded
Instructions: Cold Rotel Dip
- In a medium size bowl add all ingredients and mix well
- Serve immediately or for best tasting results let set up in refrigerator for a few hours before serving
- Grab your favorite chips and get dipping!

Crazy Busy Mama Tip:
Busy and need to prepare this dip ahead of time? No worries, you can make it the night ahead for delicious dipping the next day. Highly doubtful you will have leftovers, but if you do make sure you cover well and place in refrigerator for up to 5 days.
You could even heat this dip up a bit by using a hot rotel dip but in order to keep it kid friendly go with the original rotel or even the mild rotel to ensure no heat.

We and our friends LOVE this dip!! Easy to make if you can find the Fiesta version of HVR. I drain the Rotel before adding which helps to not be too runny. Yum!!!
