Happy Spring Break Mamas! What is a spring break beach trip without some yummy Beach Salsa?! Y'all this dip is a cinch to pull together and my taste testers absolutely loved it! In face, it didn't even last an hour! They finished it so fast and were begging for more!

And I have a lot of taste testers on this Spring Break beach trip with me! 7 to be exact. YUP, you heard that right! SEVEN kids and yours truly took a road trip to the beach for Spring Break! Have I lost my mind? possibly, but I just know the memories will be worth it! And sometimes mama, you just have to say yes and go!

Four days before we left, Lily asked if we could take a road trip to the beach for spring break. And after the year we have had, we all needed a distraction and some spontaneous fun in our life! After all, I know that is what Q would have wanted. So when Lily requested a last minute road trip, I just decided to say YES and figure it out as we went!

So cut to me and 7 teenagers embarking on a very very long car ride to spend a few relaxing days with the sun on our faces and the sand between our toes! I know these are memories I will always treasure with my children, and as heartbroken as I am that my Q isn't physically here to join us on this trip, I just know that he is smiling down on us and loving the fact that we just went with some spontaneity to make some fun for ourselves.

So the other day I made some an Easy Breezy Beach Salsa and to be honest, calling it a hit or a favorite is an understatement. This salsa was so yummy and so easy to pull together! AND the Crazy Busy Teenage Crew loved it. Like really loved it. I am actually glad I got to try it before they dug in, because it was gone in the blink of an eye! In fact, I made it before we went down to the beach and the kids beat me back up after a day in the sun and it was just about gone when I walk in the door!

11 oz can white shoepeg corn

20 oz can crushed pineapple

1 Sweet Onion, Chopped
