Do y'all dye Easter eggs in your house? We do! but with the price of eggs this year, I certainly don't want the eggs to go to waste! I have the perfect solution; egg salad!! This recipe is so easy and so yummy! It will be perfect for your Easter table, so let the kids dye eggs and then stick them in the refrigerator and use them to make egg salad for Easter this weekend!
Oh and a mom tip for mamas with younger kids. The kids will want to keep their eggs, so let them pick their favorite to keep and put the rest in the fridge! Then once the kids go to bed, peel them. There will be less tears this way! Or you could even let them help you peel the eggs after they are done dyeing them!

I know what you are thinking.. ‘Lori, eggs are so difficult to peel and the last thing I want is to waste chunks of eggs from letting the kids peel them!!!' Well don't worry about that! I have a hack that will help you achieve eggs they peel easily and perfectly every single time!
This was actually a Q hack, he was always the best at finding tips and tricks to make life easier. He was also very big at fixing things himself, he thrived with DIY.
That is one thing that has been a huge adjustment since Q passed last April. I have realized there is a lot I do not know how to do because he always took care of it. A couple of months ago, our ice maker started making the most horrific noise. And that is something that would have been right up Q's alley. He could fix just about anything. And if he couldn't, he would research a little and the next thing I knew; it was fixed. Well, I didn't even know who to call to look at our ice maker. Or where to even begin really. Just another one of the daily things that makes me miss my guy.

In fact, the kids even got him a hat that said “Mr. fix it” because he was just so handy at anything like that! Everything from haircuts, house projects to cars; I swear there is nothing that man couldn't do! He was also very intentional about teaching our children the value of hard work. We were truly lucky that we got to have him for the time we did.



We worked hard as a family, in whatever we were doing. And I love to see the values that Q instilled in our children show through in their every day lives. That is truly a treasure and something that I will always hold dear!

3/4 cup mayonnaise
1 tablespoon mustard
1/4 cup relish

Boil and peel your eggs (for the perfectly easily peeled eggs check out Q's hack)
Grab a cooling rack and a bowl.

Place the cooling rack on the top of the bowl and smash your eggs through the rack and into the bowl.

Add mayo, mustard, relish and stir
This is a taste as you go and tweak it according to your preferences!

Chill in the fridge for at least an hour and enjoy!

This egg salad goes perfectly with just about any cracker, but we love Triscuits or Wheat Thins! You could also put it into a tortilla to make a wrap!

Boil the eggs for about 10 minutes, adjust time for desired firmness
While the eggs are boiling, fill a bowl with Ice and cold water
Once the eggs are done, Immediately transfer from the hot water to the bowl of ice water.
Let the eggs cool and then start peeling!
