Not to mention, finding something healthy, quick, and tasty that the whole family will enjoy. Well, here's a solution: Egg Roll in a Bowl. It's like the superhero mama of all dinner recipes, making things easy and delicious.
Looking for a quick dinner recipe that is healthy? This quick and easy skillet dinner is it! Not to mention, it is an easy dinner recipe for families too! My kids love this just as equally as my husband and I do, so I would classify this one as a family friendly recipe!
On a low carb or Keto diet?? This 15 min skillet dinner is perfect for you!! You will definitely want to save this one to make. 15-20 minutes is all you will need to prepare this meal from kitchen to table, so perfect for a quick and easy weeknight family dinner! And tastes amazing too! Even though, I tried Keto for a bit – I currently, don’t follow any special diets but obsessed with this one! It was a go to quick easy meal for those Keto days!
Egg Roll in a Bowl, It’s everything inside an egg roll without all the carbs! Just like the name indicates! Also, I double the cabbage each time too so even a bit more of a healthy recipe that is low carb or keto friendly too!
I drizzle one of my very favorites sauces on top – the Panda Express Sweet Chili Sauce to give it that perfect egg roll taste 😋 but honestly, tastes amazing all by itself too!
So here is how I make this quick and easy- healthy dinner recipe for my family called 🥚Egg Roll in a Bowl with these simple few ingredients!
Egg Roll in a Bowl Ingredients:
1 lb of ground sausage
1 bag of Coleslaw mix ( I use two)
2 tablespoons of low sodium soy sauce
1 tablespoon of Ginger
1 teaspoon of garlic minced or powder
1/2 cup of green onions
(For a spicy kick add 1 tablespoon of red pepper flakes)
Egg Roll in a Bowl Directions:
In a Large Skillet like this HERE or you could also use a big Saute skillet like this HERE – this one is my favorite for large one pot skillet meals for my large family of 6 – brown that ground sausage until cooked.
Add in your coleslaw mix about 8 oz at a time letting it combine and wilt in otherwise you will have a mess if you dump it all in together at the same time. (especially with two bags)
Then add in remaining ingredients- soy sauce, garlic and ginger. And if you want a bit of a kick of heat- you can add red pepper flakes, but this is completely optional.
I like to wait to add the green onions in last and let them combine for a few minutes prior to serving so it has a rich flavor, this is just my personal preference.

Egg Roll in a Bowl
Ingredients
- 1 lb ground sausage
- 16 oz Coleslaw Mix I use tri-color & prefer to use 2 bags as they cook down
- 2 tbsp low sodium soy sauce
- 1 tbsp ginger
- 1 tsp minced garlic
- 1/2 cup green onions sliced
- 1 tbsp red pepper flakes *optional – this will add heat to the skillet meal
Instructions
- brown up a pound of ground sausage in skillet over med-high heat
- once sausage is cooked add coleslaw mix – I love to use two and if you do two you will want to incorporate about 8 ounces at a time and cook as you go so the coleslaw cooks down
- once combined and low sodium soy sauce, garlic and ginger
- mix all ingredients together and let cook up for about 3-5 mins
- if you like heat a bit of red pepper flakes- but this is optional
- then add sliced green onion to the top and let combine for a few mins
- Serve in a bowl
