Where are my soup lovers at? If you answer that question, you will not only love how easy this Italian Chicken Gnocchi Soup is to put together last minute and how amazingly delicious it is.

I love to serve mine with some freshly shredded Parmesan cheese, making it the perfect and super simple dinner to put together and is especially enjoyable for those chilly nights!

Italian Chicken Gnocchi Soup

Speaking of chilly nights, here in the midwest they stick around a lot longer than any of us would like so here is another amazing soup recipe with gnocchi too! Its a LOADED GNOCCHI SOUP and its a great twist on the traditional potato soup! It a definite must try!

Ok…about that Italian Chicken Gnocchi Soup, here is how I did it!

Ingredients: Italian Chicken Gnocchi Soup

  • 2 tbsp butter
  • 1 tbsp onion minced or powder- can even use 1/2 medium chopped
  • 1 tbsp garlic minced (or 4 cloves)
  • 2 tbsp tomato paste
  • 28 oz tomatoes diced – love fire roasted
  • 2-3 cups rotisserie chicken
  • 2 cups spinach or kale you can tear this up or it will wilt during cooking
  • 32 oz chicken broth low or no sodium
  • 1 cup water optional depending on desired thickness
  • 1 cup heavy whipping cream
  • 16 oz gnocchi
  • salt & pepper to taste
  • 1 tbsp basil torn – optional
  • parmesan cheese optional

Instructions: Italian Chicken Gnocchi Soup

In a pot over medium high heat add butter, garlic and onion- fresh, powder or minced. I love my PERFECT 5.5 QT POT this is not only great for soups, but you can also bake in it, I call it the pot of possibilities!

Add tomatoes, chopped rotisserie chicken, tomato paste and combine well. In the video tutorial I show using frozen tomato paste that I added when I added broth so it would combine better. Then add chicken broth and fresh basil.

Add fresh spinach. You don't have to tear this or remove steams unless you want to, because it will wilt down while cooking.

and will resemble this when not chopped or torn.

Once the your liquid comes to a simmer add gnocchi. Cook simmering for about 4 -5 mins

Then add heavy whipping cream and stir well.

Cook until comes to a simmer for a only a few minutes and gnocchi should be ready.

We love to top ours with fresh Parmesan cheese and use my favorite CHEESE SHREDDER!!

You can enjoy this hearty delicious Italian Chicken Gnocchi Soup all on its own or enjoy with a crusty french roll or even pair with a yummy grilled cheese sandwich!

Crazy Busy Mama Tip:

Looking to keep it lower sodium, you can substitute with low or no sodium chicken broth.

Looking for a protein substitution? Italian Sausage is also delicious with this recipe.

Leftovers? If you have leftovers, you will want to keep those covered in fridge and will keep for 3-5 days. I don't recommend freezing this after it is made, as it could change the consistency of the whipping cream. However, if you leave the whipping cream out of the recipe you can freeze in secure freezer proof container for 3-4 months and then add the heavy whipping cream to as you heat up the meal as the last step prior to serving.
