Gimme all the fall vibes with these southwest style Jack-O-Lantern Stuffed Peppers! You can carve them into cute Jack-O-Lantern Stuffed Peppers or make them without carving either way they are absolutely delicious and super simple to put together.
If you decide to carve them like Jack-O-Lanterns they will for sure be a hit with the entire family this spooky season. I mean just look how cute they are!

Jack-o-Lantern Stuffed Peppers Ingredients
6 peppers tri color
1 lb ground beef
2 tbsp chili powder
1 tsp cumin
1 tsp onion powder
1 1/2 tbsp garlic powder
1 cup minute rice
13 oz black beans drained and rinsed
1/2 cup corn frozen
10 oz tomato sauce
1 cup water
1 1/2 cup Mexican blend cheese
If you like to shred your own Cheese, you will LOVE this Cheese Grater- wheel! It makes shredding cheese easy and dishwasher safe so super easy to clean!
Stuffed Jack-O-Lantern Peppers Recipe
Preheat Oven to 350
Take tri color peppers and wash and carve them.
You can carve them however you like I just took a small pairing knife.
In a deep skillet with lid place carved peppers in about 1/2 cup of water and place on medium to high heat. Cover and let simmer for 6 minutes until cooked.
While those peppers are cooking, in a separate skillet on medium heat brown up some ground beef and as it is cooking add all spices.
Then add tomato sauce and mix well then add rice and water.
Add to the skillet a can of black beans rinsed and drained and fold in the beans being careful not to smash them.
Add frozen corn to this mix
Turn down heat to medium cover and allow rice to cook for about 6 mins- the same time as the peppers
Once peppers are done, grab them with tongs and place them in an oven safe dish.
Then add a scoop of the meat mixture into each pepper
Then generously add shredded cheese to the top
Once cheese has been added to the top, place them in the oven for about 5-7 minutes until the cheese melts.
Then take them out and serve.

This is why I love all the tri color peppers to give a variety of a fall look, but feel free to use whatever pepper you would like.
I love to serve these with a dollop of sour cream and guacamole to represent a stem or the jack – o- lantern.

These Jack-O-Lantern Stuffed Peppers are perfect topped with sour cream and guacamole to make a little stem like shown above, but you could also slice fresh avocado and place on top too! Then pair with a side salad to make a complete meal.
