Whose kiddo doesn't love those bite sized muffins that you can grab at the store? These Little Bites Copycat Muffins will hit the spot and once you figure out how simple they are to put together you will never buy them again. Not to mention, your kiddos wil love to spend time with you in the kitchen making them. Although, it may have taken quite a bit of patience at the time I don't regret cooking with my kids if anything I wish I had done more of it. Simple recipes like this little bites copycat muffins makes cooking and baking with your kiddos an absolute breeze!

Here is how I put these Little Bites CopyCat Muffins together!

Ingredients: Little Bites Copycat Muffins

3 pancake mix

2 water or milk

Toppings

1/3 cup mini chocolate chips

1/2 cup blueberries fresh or frozen

Little Bites Copy Cat Muffins

How To: Little Bites Copycat Muffins

Preheat Oven 350

In a large bowl mix pancake batter and liquid (milk or water)

Mix until combined

Then spray with butter on a mini muffin pan

Add a scoop full of batter to each mini muffin until 2/3 full leaving a space for baking

If you are using multiple toppings just add to the top of each muffin and stir slightly in each

If you are using just one topping you can mix in batter prior to pouring in muffin tin

Bake for 350 for 18-20 mins until toothpick comes out clean

Best stored in refrigerator for up tp 5-7 days covered, or in a airtight container in freezer for up to 3 months. That is if they last longer than the afternoon : )
