Who else loves a theme for a meal? I sure do! This One Pot Cajun Pasta is perfect for the Mardi Gras season no matter where you are! Not only is it super quick and easy, but it is just down right delicious! It is my boys favorite meal for every season! It only takes about 15 minutes and is a skillet meal so there is minimal clean up required!
And that is definitely a Crazy Busy Mama win!!

This recipe is perfect for any mama thinking to herself “what in the world will I feed my krewe tonight??”

Isn't it funny how your life changes the moment you become a mama? One day you are young and fun maybe going to a parade for Mardi Gras and the next, you are up to your elbows in diapers and bottles and the celebration sneaks up out of no where! Whether or not you celebrated Mardi Gras this weekend, or you spent the weekend at the ball park cheering for your kiddo like I did; you can still add a little Mardi Gras Flare to supper this week as a little nod to the centuries old celebration we all love!
While you know I love easy slow cooker meals, those usually need to go in by lunch time. That isn't always realistic for every single dinner! So that is why a one pot meal (or a sheet pan meal) are my next favorite! Any meal that is delicious, easy AND requires minimal clean up is a go to in this crazy busy house!
Whether you go all out for Mardi Gras, shopping for a new outfit each year, or you are like me and go to your closet they morning of Mardi Gras and find something purple you already have and throw that on, this dish is the perfect dinner for a weekday dinner for your family that will really make you feel like you on top of the themes this year!
Of course, my kiddos school colors are purple and gold, so finding something in my closet that works for Mardi Gras in Missouri is not too difficult! Finding something in all of our closets that will work for the day of Green, Purple and Yellow is usually pretty easy. Because if there is one thing about my family you should know, we cheer hard for each other! You will regularly find me unapologetically (yes some may say obnoxiously but that's their problem not mine) cheering on my kiddos no matter what they are doing!
I saw a saying the other day that I loved about cheering on your kids. “I promise you that I will always be in one of 3 places.. In front of you to cheer you on, behind you to have your back, or next to you so that you aren't walking alone”. And if that isn't motherhood in a nut shell. The kind of mother I think we all want to be is the kind that supports their child in everything; the kind of mother that is cheering their kiddos on so loudly that any negativity from others is just background noise! Because when it comes down to it, we truly want our kids to be confidently, uniquely themselves. There is a reason God made each of us different! There is so much beauty in individuality!!
Back to the reason you are here! A dinner to feed your crew (or KREWE for the Mardi Gras lovers)!!

So start the timer, dinner will be on the table in under 20 minutes! Let's grab those ingredients and get cooking! Here is how I did it…

Ingredients for One Pot Cajun Pasta
How to make One Pot Cajun Pasta: ingredients you need!
1 lb boneless skinless chicken breasts chopped
1-2 lbs shrimp
1 1/2 Tbsp cajun seasoning of choice
2-3 peppers of choice sliced into strips
1 sliced onion (or use 1 Tbsp onion powder)
1 1/2 Tbsp minced garlic
14.5 oz low-sodium chicken broth
1 can Rotel or diced tomatoes
3/4 cup heavy cream
12 oz. penne pasta
2 tsp cornstarch, mixed with 1 Tbsp water
3/4 cup finely shredded parmesan cheese ground black pepper, to taste
Garnish :3 Tbsp minced fresh parsley

Chop Chicken and rinse shrimp


Chop Peppers and Parsley and set aside. Shred cheese and set aside.
Make sure you check out my Crazy Busy Mama Hack below for chopping peppers, it will blow your mind! Also I love this cheese grater wheel. It makes shredding cheese so simple and is dishwasher safe!



In a large skillet, Add olive oil, chicken and favorite cajun seasoning . Stir to mix & cook chicken



Add Shrimp, onion powder, cajun seasoning of choice, and butter to skillet & cook



Remove Meat from pan and place on aluminum foil & cover with foil

Add oil and peppers to the skillet then add rotel, garlic, and a shake of cajun seasoning & Sauté
Add chicken broth, whipping cream and pasta of choice



Stir to mix together. Cover and let the pasta cook


While the pasta is cooking, Mix cornstarch and 1 tbsp water in a separate bowl
Add cornstarch mix once pasta is cooked



Add the chicken and shrimp into the pasta mixture. Top with Shredded Parmesan Cheese and garnish with parsley

Ingredients

- ¾ cup heavy cream
- 12 oz. penne pasta
- 2 tsp cornstarch
- ¾ cup shredded parmesan
- 3 tbsp parsley garnish
Instructions

- Shred cheese and set aside.
