Looking for an easy healthy dinner idea? You have to try these Oven Baked Chicken Thighs. My late husband Quintin, used to make these chicken thighs all the time on the smoker for the boys for easy grab and go protein as they are always trying to get in extra protein each day for snacking or easy meal options grabs for back to school. This is my Crazy Busy Mama version since he was the grill smoker master, but I am still going to add these to the COOKING WITH Q section of my blog for those who would like to check out Q's other favorites. In editing this older video of him below, I see his hands helping me prepare this meal and it makes me happy and sad all in the same. We miss him so much he added such value to our family in all he did including those meal times.

These Oven Baked Chicken Thighs are so easy to throw together last minute and put few sides alongside to make the most delicious Crazy Busy Mama meal.

Instead of serving these as a thigh at dinner, you can also serve them diced up with jasmine rice and make a chicken bowl such a yummy way to serve this chicken too. Seriously, these Oven Baked Chicken Thighs are so versatile and will be a protein staple for meals.

This is how I made these Oven Baked Chicken Thighs.

Ingredients: Oven Baked Chicken Thighs

▢3-4 lbs boneless chicken thighs
▢1 tbsp extra virgin olive oil
▢2 tbsp texas sugar bbq rub (or any all purpose seasoning will work)

    Instructions: Oven Baked Chicken Thighs

    • Preheat oven to 400 degrees
    • Take a 9X13 dish and spray with non stick spray
    • You can remove excess skin if you would like and pat the thighs dry
    • Then coat all thighs with olive oil then place in coated dish
    • Take portioned out dry seasoning and generously coat each thigh
    • Use your hands to rub the oil and seasonings all over front and back of each thigh

    As my late husband helped me put this meal together, I captured his hand in the video so I had to take a screenshot and show you here. Truly this picture embodies how much he valued our family and would pitch in where ever it was needed to help. He was an amazing man and we miss him so much.

    Make sure to generously coat the chicken in dish before placing into pre heated oven.

    • Place uncovered thighs in dish in oven and bake at 400 for 30-40 mins

    This picture I added, because it was a cheesy smile that came so effortlessly at the time in my life. Life with Q was such an amazing adventure.

    • until internal temperature reaches 180-190 degrees
    • Allow chicken thighs to set for 10 minutes prior to serving.

    Notes

    Chicken thighs only need to reach an internal temperature of 165 degrees to be cooked, however they are much more tender when they're cooked to a higher internal temperature. You can also briefly broil if desired to further crisp up the skin then let the chicken thighs rest for 10 minutes before serving.
