Ingredients: Pepper Jack Chicken Casserole
- 1 1/2 lbs chicken breasts or thighs
- 10 oz cream of chicken
- 12 oz Stove Top Chicken Stuffing Mix
- 1/4 cup milk
- 6 tbsp butter
- 6 slices pepper jack cheese
Instructions: Pepper Jack Chicken Casserole
- Preheat oven to 350
- Spray 9X13 dish with non stick cooking spray
- Cover bottom of baking dish with chicken. I use 3 large chicken breasts and cut them in half
- Cover chicken with sliced pepper jack cheese
- In a bowl mix cream of chicken and milk well and spread over the top of chicken making sure all chicken is covered
- Once chicken is covered, add stuffing mix to the top covering all areas of chicken
- Place butter in a microwavable safe dish and melt and pour over the top of the stuffing mix in casserole dish
Cover dish with foil and bake at 350 for 55-60 mins until chicken is done at 160 temp
Once done, its time to dig in!
