If you love salty treats this Pickle Roll up is for you! When I first tried these, I was doing Keto and was pleasantly surprised and fell in love very quickly! Wether you are keto, low carb or just love a great unsweet snack these are amazing. If I had found these when I was pregnant they would have been absolutely perfect for my pickle cravings! You will have to give them a try! I believe you will also be pleasantly surprised!

These would make a quick grab and go snack or even great appetizers for game day too! And they are low carb too! So if you are on that low carb diet, this one is for you!

There are so many variations to these pickle roll ups and most people use ham but I love rotisserie chicken lunch meat the most. The best thing is you probably have all the ingredients in your home now to try these. And of course you can make the with any lunch meat you choose.

Speaking of Keto, if you are looking for easy keto or low carb meals you have to check this EGG ROLL IN A BOWL out and try it for dinner! It is absolutely delicious and was a go to for me when I was trying to go low carb.

Ingredients: Pickle Roll Up

  • 12 dill pickles – or you can make them single too- just use however many you need
  • 8 oz rotisserie chicken lunch meat one slice – one per pickle
  • 1/2 tbsp cream cheese: I love to use flavored whipped chive

  • enjoy immediately or store in glass or plastic container in fridge for up to 3 days
  • make up as many as you want and serve them on a board for a low carb snack

Gather all 3 ingredients. Gather enough for as many pickle rolls ups you will want to make. On a flat surface like a cutting board take one piece of lunch meat and lay it out flat.

Then take a spoonful of softened cream cheese and spread it over the piece of lunch meat. Just enough to cover the meat

Take as many pickles that you are going to wrap and blot them with a paper towel getting all the juices off. Trying to get them as dry as possible.

You will want to make sure to bloat off all excess fluid so they are dry as possible.

Then take your dry dill pickle and place on end side with cream cheese and start to roll towards you until you cover the entire pickle

Y'all these are absolutely delicious!

Like I mentioned earlier, these make the perfect snack or even game day appetizer!

But I will forewarn you… Be careful once you take a bite they are quite addictive!

These pickle roll ups can be rolled with any lunch meat. You could do some chicken (like shown in recipe), turkey or ham. You can also use regular cream cheese or use different flavors of cream cheese for a variety. Think of all the variations of meats and cream cheeses you can put together. Perfect low carb item to your charcuterie board or game day spread.
