If you like Piña Coladas and getting caught in the rain, sorry sorry I had to!! But seriously, if you like Piña Coladas, then this easy Piña Colada Dip is exactly what you didn't even know your life was missing!

I mean let's face it, an icy cold Piña Colada on a hot beach day is down right refreshing! Well what about the days that you aren't soaking up beach rays on vacation? This Piña Colada dip is exactly what you need! It is even perfect for beach days, trust me! I know! I am at the beach with 7 teenagers, and this dip was a huge hit!

Four days before we left, Lily asked if we could take a road trip to the beach for spring break. And after the year we have had, we all needed a distraction and some spontaneous fun in our life! After all, I know that is what Q would have wanted. So when Lily requested a last minute road trip, I just decided to say YES and figure it out as we went!

And man am I glad I did! As you know my Ella girl is a senior in high school so I am totally enjoying any time I get to spend with my sweet girl. I just Can't help but remember her as the sweetest little toddler, running around and being a crazy busy “mama” to all her baby dolls. Where did the time go?

I am thankful each and everyday for the 4 kiddos the Lord blessed me and Q with! If you are a mama, I know you feel the same way! I mean, what a privilege!! For the Lord to entrust us with our children, to teach them of his love and raise them up in HIS way! We aren't perfect, but we are imperfectly HIS and HE is perfectly ours! What a reassuring thought, we are never alone because we are HIS!

Okay so, this week with 7 teens has been so fun. I have made everything from grilled chicken to beach salsa! And Fisher and his friends even surprised me by grilling their own hamburgers the other night! As a mama, It is always so fun to see your kids do something like that. And you get a glimpse of the future with a memory of the past. Like you still remember them playing T-Ball but you get a glimpse of what they will be like bringing in burgers from the grill at their own home when they have a family of their own!

Yesterday I made the yummiest Piña Colada dip! It was so easy and perfect for this crew of teens! They loved it! Here is how I made it! Piña Colada Dip!

How to make Piña Colada Dip: ingredients you need!

1 (3.4 ounce) box instant coconut pudding mix

1 (20 ounce) can crushed pineapple, undrained

1 (8 ounce) container Cool Whip, thawed

    2 Tablespoons toasted coconut, for garnish if desired

    Whisk together the dry pudding mix and pineapple until it thickens.

    Fold in the Cool Whip gently.

    Refrigerate until ready to serve.

    Serve with pineapple wedges and vanilla wafer cookies.

    **For a more tropical flair, Stir in a ½ teaspoon rum extract

    ** This fluffy fruit dip can also be made with 3 cups of Homemade Whipped Cream if you prefer that instead of Cool Whip.
