Here is how I put together these easy and delicious ROTISSERIE CHICKEN TACOS.
Ingredients: ROTISSERIE CHICKEN TACOS
- 12 corn tortillas
- 1/2 tbsp olive oil
- 1 rotisserie chicken deboned
- 1 tsp paprika
- 1 1/2 tbsp cumin
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 1 cup water
- 6 tbsp tomato paste
- 2 cups mexican cheese blend or monterey jack
- any desired toppings- we love tomatoes, lettuce, cilantro and avocado and love to squeeze fresh lime juice on top
Instructions: ROTISSERIE CHICKEN TACOS
- Preheat Oven to 425
- Debone rotisserie chicken and place meat in the bowl
- Add seasonings and tomato paste and water to the bowl and mix well.
- Grab street size corn tortillas and put olive oil on the shells
- Now fill those shells with chicken mixture
- In a 9X13 oven safe dish, place those filled shells
- Fill 9X13 dish full of tacos and place cheese in each one – as little or as much as you desire.
- Bake at 425 for 15-20 mins
- Prepare and chop desired toppings – we love tomatoes, lettuce, cilantro and avocado and love to squeeze fresh lime juice on top
- Once Tacos are heated through take them out of the oven and add desired toppings that you have prepared.
