I don't know a mama, who doesn't love an easy scrumptious sheet pan dinner! This Sheet Pan Enchiladas will not disappoint!!
If you love sheet pan meals, then you have to try this delicious HONEY MUSTARD CHICKEN sheet pan dinner. Another easy family favorite! So if you are new to sheet pan cooking, you will want to grab you a set of non stick sheet pans. I love this SHEET PAN SET because the large sheet pan is massive and allows for me to cook a full size sheet pan meal for my family, not to mention it comes in super handy throughout the holiday baking season. Hands down, one of my best purchases for cooking!
Ingredients: Sheet Pan Enchiladas
1 lb ground beef
27.5 oz corn tortillas yellow or white
2 tbsp taco seasoning
28 oz red Enchilada Sauce
1 1/2 cups pepper jack
1/2 cup colby jack
2.25 oz black olives sliced
1/4 cup jalapeño sliced – jar
Instructions: Sheet Pan Enchiladas
- Preheat oven 375
- In a skillet over medium heat brown ground beef and add taco seasoning until cooked.
I love this MEAT MASHER so helpful with all things in the kitchen from chopping up ground beef, to shredding chicken, and scrambling eggs. I have no less than 3 in my kitchen, I use it this much. - Cut up corn tortillas and place into a large bowl
- Then add cooked taco meat and stir together once combined add enchilada sauce and mix well
- Grab a large sheet pan lined with parchment paper and pour all mixed ingredients down on sheet and smooth out to as much of a single layer as you can, covering the entire sheet pan.
- Shred cheeses you can use whatever cheese you like best. I love to do a combination of montery jack and cheddar

- Once cheese is shredded cover entire sheet pan ingredients with cheese
Once covered with cheese add sliced olives and jalapeños if if wish, I usually cover only half of the sheet pan with jalapeños to make it super family friendly for all.
- Bake 375 or 25 mins
- Once done it will be bubbly and crispy, let cool for a few minutes then cut and serve with a large turner spatula with favorite toppings
- We love sour cream, hot sauce and avocado sliced
Its as amazing as it looks!

I know you mentioned that you used a large sheet pan, but what are the actual dimensions of your sheet pan? I have 3-4 different sizes and just wasn’t sure which one it would all fit best on.
The size will be dependent upon the size of family you are cooking for. The one I am using here is the largest out of the 3 on the sheet pan and my favorite for large sheet pan dinners like this and for holiday baking and measures at 15 X 21 X 1. Hope that helps!

You could sure try! I have never done this recipe with flour tortillas or low carb, but I don’t see why it wouldn’t be delicious. If you use them please let us know how it turned out.

So easy and delicious, easy to modify as needed. I spread on two pans. I used a pkg of 30 tortillas, one large (29oz) can of sauce, 2 lbs ground beef, well seasoned. I added chopped onions and topped with peppers, tomatoes, green onions, and olives. Light cheese is our preference. Everyone loved this version and I did too since they were so easy to throw together!
Have made these twice and they’re delicious! They also can feed a large group. Just took them to a party and friend asked for the recipe.
