Slow Cooker Chicken Chili Ingredients
Rotisserie Chicken – deboned and chopped or shredded
1 onion chopped
2 cups Chicken broth
10 oz diced tomatoes canned, undrained
2 oz tomato paste ( Here is what to do with the rest of your Tomato paste HERE – this tip is a great money savings hack in the kitchen)
1 tbsp Chili powder
1 tbsp Cumin
½ tbsp Garlic powder
2 cans of Ranch style beans
4 oz Cream cheese
Optional toppings:
Monterey Jack cheese
Avocado
Sour cream
1 Jalapeño pepper chopped (optional)
Green onion

Slow Cooker Chicken Chili
Ingredients
- 1 Rotisserie Chicken Chopped
- 1 small onion diced -can sub minced onion 1 1/2 Tbsp
- 2 cups Chicken Broth can use low sodium or no sodium
- 10 oz diced tomatoes can undrained
- 2 oz tomato paste
- 1 tbsp chili powder
- 1 tbsp cumin
- 1/2 tbsp Garlic powder
- 30 oz Ranch Style Beans 2 -15 oz cans – Can omit if you want to make keto friendly
- 4 oz cream cheese softened
Optional Toppings:
- Montery Jack Cheese Shredded
- Avocado
- Sour Cream
- Green Onion
- Jalapeno fresh- sliced
Instructions
- Debone Rotisserie chicken and chop up meat ( you can also shred)
- Add remaining ingredients in with chicken – This is a true dump and go recipe
- After 4-6 hours on warm/low depending on the setting of your crockpot, you will want to add your desired toppings.
- we love to serve with tortilla chips but you can enjoy with cornbread or alone
- *you can prepare over the stovetop – start with a 1 tbsp butter to sautee chicken in prior to adding remaining ingredients. Make sure to adjust cook time and allow at least 30 minutes to simmer on stove top for all ingredients to combine well
