Who wouldn't love coming home from a long day of carpool, work, practice and errands to a delicious home cooked meal?

I mean, that's the dream right? Do you ever look back and think how did my mama do it all?

I used to ask myself this often! That's why I decided to come up with my quick and easy “dump & go” slow cooker meals! I knew I wanted my family to have that quality time around the table each night, but I couldn't figure out how that was possible without spending over an hour in the kitchen after a long day of being mom. Then by the time we sat down to eat, everyone was hangry and I was worn out. Once dinner was finally ready, the quality time I so desired ended up just being tired and hungry kids and totally exhausted parents. And that isn't fun for anyone! But with a few easy recipes from my Slow Cooker Cookbook, your table could have smiles like this!

Let's face it. How “quality” can our quality time together be if we are all tired and moody? The kids will be picking at each other; you will have been spending the entire time cooking also being a referee! And a snack monitor, because of course you don't want them to ruin the supper you just spent so long making! If that sounds like you, Welcome to Crazy Busy Mama, where you will see real life, the easy and the hard! My goal is to make some of the hard a little easier for you!

Okay, so what saved my sanity and honestly made it possible for me to be the kind of Mama I always wanted to be? My slow cooker!

I love this little appliance so much, and look how pretty it is!!

One of the crockpot meals that my sons love the most is my Pulled Pork! It is so easy and so delicious!

It is also versatile! Don't want pulled pork Hawaiian Roll sliders (you might be crazy if you don't like Hawaiian Rolls, but who am I to judge?) Put it over a baked potato or even over a salad!

So here is how I make it!

Ingredients:

  • Boston Pork Butt
  • 1 onion sliced
  • 2 Tbsp Garlic Powder
  • Generous amount of pepper
  • Pinch of Salt
  • 12 oz can of Dr Pepper
  • 1 bottle of your favorite BBQ sauce
  • Hawaiian Rolls (optional)

For those of you that like a quick video guide, here you go! Or keep reading below for more detailed instructions.

Instructions:

  1. Chop the onion and put it in the bottom of your slow cooker
  2. Prepare meat: cover it in the seasoning (garlic powder, pinch of salt, generous pepper)

3. Pour Dr. Pepper over the meat

4. Slow cook 10 hours

5. Separate fat from meat and pull apart

6. Strain the fat from the leftover juice

7. Add the meat back into the strained juice

9. Add favorite BBQ sauce

Stir and serve over sliders

Side Idea

This Slow Cooker Pulled Pork pairs great with any of your typical BBQ sides, but my family's favorite is this Potato Salad! You will want to make this one ahead. So planning helps with this recipe as it allows all the flavors to set up a but before enjoying, however if you cannot make it the night before make sure it is at least 4-6 hours but preferably overnight. But TRUST ME it is worth it!

Crazy Busy Mama Tip: When cooking a larger cut of meat like this Boston Butt, it will cook so much more evenly leaving you with a juicer meal after if you “respect the meat” and allow it to sit on the counter for a little big before cooking it!

Let me clarify, do NOT leave it on the counter over night, you still want to follow food safety precautions, BUT.. if you take the Boston Butt out of the fridge right when you wake up in the morning, then have coffee and a shower, THEN put it in the slow cooker, it will be less chilled as it begins to cook and the result will be even more delicious!
