15 mins & ONLY 4 Ingredients?? Yes! You read that right! This would be perfect with leftover taco meat too! So you could even extend Taco night into Wednesday! Oh… And the Doritos are completely optional, but trust me try it Doritos to the bottom 🤤 you will thank me! There is just something about that crunch! Muah.. perfection!

Taco Rice Bowl Ingredients
1-2 lbs of hamburger meat
Taco Seasoning packet – 2 Tbsp of Taco Seasoning
2 cups of Minute Rice
2 cups of Water
1-2 cups of shredded cheese
Add desired toppings… I love lettuce, tomato, avocado, sour cream, also love the Taco Bell avocado ranch on it too! They carry it at Walmart and has become a favorite of mine for taco Tuesday. Honestly though, this is YOUR taco rice bowl so you can add whatever you like! My son loves hot stuff so is aways adding Hot sauce and chipotle peppers to things like this bowl!

Brown up your ground beef in a large skillet! Don't forget to grab yourself one of these meat mashers that works wonders for ground beef. I Use mine all the time for recipes like this and it is one of my favorite kitchen utensils. You can grab one here: Meat Masher
Add two cups of rice and 2 cups of water and your taco seasoning. My house is divided on how much taco seasoning your should use here. I have two kiddos that like very little seasoning and I have two that love a bunch. So you will have to play around with this a little and season to your family's desired amount
I use uncooked minute rice for this. I know many people do not like minute rice so feel free to substitute whatever kind of rice you prefer here.
Add cheese and cover over low heat and melt. We love to take a block of colby jack and shred it onto here but ant cheese you prefer will work just fine in this setting.
Then serve up in a bowl, and trust me add a few crushed Doritos then add the taco rice on top then your favorite toppings.

Taco Rice Bowl
Ingredients
- 1-2 lbs ground beef I use 90% lean
- 2 cups rice I use minute rice
- 2 tbsp taco seasoning packet of taco seasoning
- 2 cups water
- 1 1/2 cups colby jack cheese shredded
Instructions
- In a large skillet brown 1-2 lbs of ground beef
- once meat is cooked add 2 tbsp of taco seasoning
- then add 2 cups of minute rice along with 2 cups of water
- cover and cook for 5 minutes until rice is tender
- shred 1 1/2 cups of cheddar cheese
- Put cheese on top of meat and rice and cover on low heat for about 2-3 mins until cheese melts
- Once cheese melts it is ready to serve.
- I love to add a few crushed Doritos at the bottom of mine to give it a crunch- this is obviously optional.
- Then add desired toppings to taco rice

What if you want to use real rice. Same cooking concept, or cook the rice first?

My family loved it. I added black beans. Instead of 2 cups of water, I added 1 cup of beef broth and one cup water. We will definitely make again.
