We are officially in the “BER” months, so that means it is SOUP season! Nothing better than a bowl of warm delicious soup to fill you with warmth on those crisp cool fall into winter months. This easy taco soup is only

I love to serve my Taco Soup with tortilla chips and sometimes I even crush them up on top of my soup, it just adds that little extra southwest flair of yummy goodness!

Ingredients: Taco Soup

10 oz rotel

15 oz kidney beans drained

15 oz ranch style beans drained

15 oz black beans drained

15 oz pinto beans drained

16 oz corn drained

29 oz tomato sauce or stewed Tomatoes

1 oz taco seasoning

2 1/2 cups water optional- if you want more soup consistency (I left it more chowder/chili consistency)

GARNISH:

Fresh cilantro

Sour cream

Cheese

Not pictured is an important ingredient for taco soup which is corn, make sure to add this when you place all ingredients in the slow cooker.

Instructions: Taco Soup

In a medium skillet brown a pound of ground beef, drain off grease

Add cooked ground beef to slow cooker

Add a packet of taco seasoning and all of the other ingredients (drained) into the slow cooker on top of the ground beef. No need to drain rotel.

Mix everything together, place lid on top and turn heat to low for 4-6 hours

*Corn is missing in the picture below, make sure to add corn to the slow cooker

Once Taco Soup is done stir and get ready to scoop out.

About 10 minutes before taco soup is done you will want to prepare any garnishes you desire for the top.

I love fresh cilantro topped with sour cream and shredded cheese.

Serve with tortilla chips on the side.

Look at the amazing deliciousness!

If you are not serving this with tortilla chips, this would also be amazing with HONEY CORNBREAD

Crazy Busy Mama Tip:

You can use left over taco meat like I did for this recipe. A great Crazy Busy Mama hack is to brown up double the amount of taco meat you need for those taco nights to be able to use in a future meal to cut down the time to prepare a new dinner.
