I LOVE Taco Tuesday! There is just something so yummy about tacos made your way!

Although my family thinks tacos could never be boring, I thought a twist on your typical Taco Tuesday would be fun! Making Taco Tuesday a tradition in your house is a great way to make sure you and your family are eating together around the table each week! It is also a huge hit with my teens! So if you want to have all of your children's friends at your house so you can enjoy (or experience 🤣) their company and stay in the “cool moms” club. Make Tuesday Taco Night a tradition in your home! Trust me, it will be fun! But here is my pro-tip: PAPER PLATES! If you are going to have a house full of teens, paper products are a must!

This meal is also PERFECT for toddlers who lose most of the taco toppings while trying to eat them! I'll include my tip for that below 🙂

These deconstructed chicken tacos are so easy and so tasty! And let me tell you, it is a good thing they are easy and can feed a crowd with little effort because they will quickly become a family favorite! Just get ready for everyone to want seconds!

Okay so here's how I make them in my slow cooker!

Ingredients:

  • 3 chicken breasts
  • 1 can southwest corn (drained)
  • 1 packet taco seasoning
  • 20 oz of salsa
  • 10 corn tortillas cut into strips
  • 1 cup of water
  • 1 ½ cup shredded cheddar cheese

Instructions:

  1. Add chicken, corn, salsa, and taco seasoning into the crockpot and cook on low for 6-8 hours

2. Cut tortillas into strips

3. Add tortillas water and cheese and cook for another 30 minutes to 1 hour

4. Enjoy!

Side idea: Spanish Rice!

Crazy Busy Mama Tip: Do the insides of your toddlers taco always fall out and end up on the floor as food for the dog? Don't cancel Taco Tuesday! Just wrap the very bottom in aluminum foil to hold it together. **make sure you remove it before they get to the end of their taco!
