Who is ready for Thanksgiving? I know I am, I cannot wait to enjoy my favorite Thanksgiving casserole. I just love all the delicious casseroles and foods that adorn a big table and time with my family. However, Thanksgiving can be quite the stressor too trying to get all the sides together for the perfect Thanksgiving meal. If you are craving a Thanksgiving meal and want something you can throw together on a quick easy week night this is PERFECTION!! I call this the Thanksgiving Casserole because it tastes just like a Thanksgiving feast and like I said, it is a cinch to throw together too!

I call this a Thanksgiving casserole! It’s absolutely delicious and would be great for those leftovers from Thanksgiving too! I mean can you imagine putting some delicious left over green beans in this casserole too?? Oh YUM! Talk about comfort food to the max! Think of all the possibilities!

How to make Thanksgiving Casserole: What you need
2 lbs Rotisserie Chicken
10.5 cream of mushroom
10.5 cream of chicken
12 oz herb stuffing mix
3 cups chicken broth
8 tbsp butter

How to make Thanksgiving Casserole: a step by step guide
Preheat Oven to 350
Shred Rotisserie Chicken and add to the bottom of the pan mixing in cream soups. If you haven't seen this hack for deboning rotisserie chicken, stop right now and check it out!
Once mixed together well, add chicken broth to dish and mix well
Then add dry stuffing mix to the top of the dish
Melt stick of butter (8 Tbsp) in microwave
Add melted butter to the top of the stuffing covering all areas
Bake at 350 for 45 mins or until bubbly
Serve immediately

Crazy Busy Mama TIP:
Try making this dish in a disposable 9X13 makes for easier clean up especially if you are making this after a holiday rush. The most amazing chicken recipe you can actually make this ahead of time put in the fridge for on those busy nights you can just pop right in the oven. You may however need to increase cooking time for 5-10 minutes to make sure center is hot.
Traveling or not ditch the real casserole dish and try a disposable one! This makes this Thanksgiving Casserole easier clean up.

Definitely trying this one next week!!! There is SO MUCH you can do with a rotisserie chicken. I’ve actually made two different dinners this week with them. I believe sometimes you can catch them a day old for even $5.
